Ingredients

2 heads of endive
2 cups baby greens (spinach)
2 green apples
1 cup walnuts
1/3 cup dates or raisins/cranberries
3 oz goat or feta cheese (optional) 

Dressing:
4 tbsp pure apple cider vinegar or red wine vinegar
1 tbsp Dijon mustard
¼ walnut oil or extra virgin olive oli
1 tsp sea salt


Directions

Preheat oven to 400 degrees F. Spread walnuts on a baking sheet and toast in the oven for 4 minutes, or until golden. Cool and chop. Whisk the mustard and vinegar. Whisk in the olive oil and season with sea salt. Slice apples and pick apart endive and lay greens on a plate. Combine walnuts, dates, and greens. Add dressing, toss to coat and top it with the feta/ goat cheese.
